Ingredients:
For Chole (Chickpea Curry):
1 cup dried chickpeas (or 2 cans of chickpeas, drained and rinsed)

2-3 green chilies, finely chopped
2-3 cloves of garlic, minced
1-inch piece of ginger, grated
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt to taste
2 tablespoons oil
Fresh cilantro leaves for garnish
For Bhature (Fried Bread):
2 cups all-purpose flour
1/2 cup yogurt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon sugar
Salt to taste
Water (as needed)
Oil for deep frying
Instructions:
For Chole (Chickpea Curry):
If using dried chickpeas, soak them overnight in water. Then, cook them in a pressure cooker until soft. If using canned chickpeas, skip this step.
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until golden brown.
Add minced garlic, grated ginger, and chopped green chilies. Sauté for another 2-3 minutes.
Add pureed tomatoes and cook until the oil separates.
Add coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a couple of minutes.
Add cooked chickpeas (or canned chickpeas) along with some water. Simmer for 10-15 minutes until the flavors meld together.
Garnish with freshly chopped cilantro leaves before serving.
For Bhature (Fried Bread):
In a mixing bowl, combine all-purpose flour, yogurt, baking powder, baking soda, sugar, and salt.
Knead the mixture into a soft dough, adding water as needed. Cover the dough and let it rest for about 2 hours.
Divide the dough into small balls and roll them out into oval or round shapes.
Heat oil in a deep frying pan over medium-high heat.
Carefully slide the rolled-out dough into the hot oil and fry until they puff up and turn golden brown on both sides.
Remove the bhature from the oil and drain them on paper towels to remove excess oil.
Serving:
