Cut them lengthwise
Remove all seeds and the white inner part
Boil the chillies in water for 5–7 minutes
Drain the water completely
Repeat this boiling process three times, using fresh water each time
This process removes all heat and bitterness.
Let the boiled chillies cool
Grind them into a smooth paste using a little milk
Take a heavy-bottom pan and place it on low flame
Add the milk and bring it to a boil
Stir regularly so it does not burn
Cook until the milk reduces to half
This gives the halwa its creamy and rich base.
Add the green chilli paste to the reduced milk
Mix well
Cook on low flame
Stir continuously to avoid lumps
Cook until the mixture thickens and starts leaving the sides of the pan.
Add sugar and mix properly
The mixture may loosen slightly, which is normal
Add ghee slowly while stirring
Cook until the halwa thickens again and looks glossy.
Add khoya if using
Add cashews, almonds, and raisins
Mix well and cook for another 5–7 minutes
Add cardamom powder and saffron strands
Mix gently
Turn off the flame
Let the halwa rest for a few minutes
Serve warm for best taste
Garnish with chopped nuts
Perfect for festivals, weddings, or special dinners
