Introduction:
Sahi Paneer is a popular North Indian dish that combines the richness of paneer (Indian cottage cheese) with a creamy tomato-based gravy. It's a delightful dish that is perfect for special occasions or when you're craving something indulgent. Here's a simple recipe to make Sahi Paneer at home.
Ingredients:
250 grams paneer (cottage cheese), cubed
2 large tomatoes, pureed
1 large onion, finely chopped
1/2 cup fresh cream
2 tablespoons butter or ghee (clarified butter)
1 tablespoon ginger-garlic paste
1 green chili, finely chopped (optional, adjust to taste)
1 teaspoon cumin seeds
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
Salt to taste
Fresh coriander leaves for garnish
Instructions:
1. Preparation:
Cut the paneer into cubes and soak them in lukewarm water for 15-20 minutes. This step helps in keeping the paneer soft.
Puree the tomatoes in a blender and keep aside.
Finely chop the onion and green chili.
2. Cooking:
Heat butter or ghee in a pan or kadhai over medium heat.
Add cumin seeds and let them splutter.
Add chopped onions and green chili. Sauté until onions turn translucent.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Now, add the tomato puree and cook until the oil separates from the mixture. This usually takes about 5-7 minutes.
Add red chili powder, turmeric powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
Lower the heat and add fresh cream to the gravy. Stir continuously to avoid curdling.
Once the gravy is well mixed, add paneer cubes and gently mix them with the gravy.
Sprinkle garam masala powder over the paneer and gravy.
Cover the pan and let it simmer for 2-3 minutes on low heat, allowing the flavors to blend.
3. Serving:
Garnish with fresh coriander leaves.
Serve hot with naan, roti, or steamed rice.
Tips:
You can adjust the consistency of the gravy by adding water or cream accordingly.
For a richer flavor, you can also add a tablespoon of cashew paste along with the cream.
If you prefer a spicier taste, increase the quantity of green chilies or red chili powder.
Make sure not to overcook the paneer as it can become rubbery.
Soaking paneer in warm water before adding it to the gravy ensures it stays soft and absorbs the flavors well.
