Global Iftar: UAE Homes Serve Lazy Cake to Lachka Menus

During Ramadan's final stretch, Khaleej Times asked fasting residents from various backgrounds to share their favorite iftar dishes. Here are our top selections:

Mahalabia (milk pudding)

Mahalabia, also known as Muhallebi, is a creamy Middle Eastern milk pudding adorned with nuts, rose petals, and/or sugar syrup. Legend holds that it was introduced to Arab cuisine in the late seventh century by a Persian cook from the Sasanian Empire. The dish was served to an Arab general named Al-Muhallab ibn Abi Sufra, who enjoyed it so much that he named it after himself.

Tinginys (chocolate salami)

Tinginysis, also known as the lazy cake, lives up to its name with its delightful combination of biscuity crunchiness and chocolatey richness. According to Viktorija, this dessert is simple to prepare and doesn't require baking, making it a budget-friendly delight. Its origins trace back to the sixties when a woman accidentally made her chocolate mixture overly sweet. To salvage it, she incorporated broken-up biscuits, thus creating the first tinginys.

Aviena su darzovemis (lamb with veggies)

Maimouna Liskauskaite, a Dubai resident who embraced Islam in 2003, hails from Lithuania. Among the dishes adorning her iftar table, crispy bread with garlic and buns with cheese hold a special place. However, her favorite is Aviena su darzovemis (lamb with veggies), reminiscent of the Moroccan tagine, served in a small clay pot.

Roz Bel Khalka (caramelized rice with nuts, raisins)

Roz bel Khalta, also known as Khalta rice, is an Egyptian twist on rice pilaf, enriched with a medley of spices, sweet and tangy dried fruits, assorted nuts, and meat. Dubai-based Canadian quilt artist Farida Talaat, originally from Egypt, cherishes the tradition of her mother serving it on their iftar table every Ramadan. "I can still recall the aromatic cinnamon scent from my childhood," she reminisces.
