Golgappa, also known as pani puri, is one of India’s most loved street foods. It is a small, round puri filled with spicy, tangy, and sweet water that bursts with flavor in every bite. Many people enjoy golgappa from food stalls, but making it at home is cleaner, healthier, and just as tasty. With a few simple ingredients and steps, anyone can prepare refreshing golgappa water right in their kitchen.

Ingredients Needed

To make golgappa water, you will need:

Mint leaves – 1 cup

Coriander leaves – 1 cup

Green chilies – 2 (adjust to taste)

Tamarind pulp – 2 tablespoons

Black salt – 1 teaspoon

Roasted cumin powder – 1 teaspoon

Chaat masala – 1 teaspoon

Lemon juice – 1 tablespoon

Salt – as needed

Cold water – about 4 cups

These ingredients together give the famous spicy, sour, and refreshing taste that makes golgappa so special.

Step-by-Step Recipe

Prepare the paste:
Wash the mint and coriander leaves properly. Put them into a blender along with green chilies and tamarind pulp. Add a little water and grind everything into a smooth paste.

Mix the spices:
Take a large bowl. Add the mint-coriander paste into it. Then, mix black salt, roasted cumin powder, chaat masala, lemon juice, and regular salt.

Add water:
Pour about 4 cups of cold water into the bowl. Stir well until everything mixes evenly.

Adjust the taste:
Taste the water. If it feels too spicy, you can add a little more cold water or a few drops of lemon juice. If you like it tangier, add a bit more tamarind pulp.

Chill before serving:
Keep the golgappa water in the fridge for at least 30 minutes. Chilling helps the flavors blend well and gives it a refreshing taste.

Now your golgappa water is ready! You can serve it with puris filled with boiled potatoes, chickpeas, or sprouts.

Health Benefits of Golgappa Water

While golgappa is known mostly for its taste, it also offers some surprising health benefits — especially when made at home with clean ingredients.

Good for digestion:
The spices like cumin, black salt, and tamarind help improve digestion and reduce bloating.

Rich in vitamins:
Mint and coriander are full of vitamin C, iron, and antioxidants that help boost immunity and keep the body fresh.

Cooling effect:
Mint water keeps your body cool, especially during the summer months.

Boosts appetite:
The tangy and spicy flavor helps increase appetite and makes you feel refreshed after a long day.

Tips for Making It Healthier

Use clean, filtered water instead of tap water.

Add jaggery instead of sugar if you prefer a sweet and sour taste.

Avoid using too much salt or chili if you have stomach problems.

Always keep the water refrigerated and consume it the same day.

A Taste of Tradition

Golgappa water is not just a snack — it is part of India’s food culture. From Delhi to Mumbai, every region has its own version — some make it spicy, others sweet or tangy. The best part about making it at home is that you can adjust the flavor to your liking.
