Mint leaves – 1 cup
Coriander leaves – 1 cup
Green chilies – 2 (adjust to taste)
Tamarind pulp – 2 tablespoons
Black salt – 1 teaspoon
Roasted cumin powder – 1 teaspoon
Chaat masala – 1 teaspoon
Lemon juice – 1 tablespoon
Salt – as needed
Cold water – about 4 cups

Step-by-Step Recipe
Prepare the paste:
Wash the mint and coriander leaves properly. Put them into a blender along with green chilies and tamarind pulp. Add a little water and grind everything into a smooth paste.
Mix the spices:
Take a large bowl. Add the mint-coriander paste into it. Then, mix black salt, roasted cumin powder, chaat masala, lemon juice, and regular salt.
Add water:
Pour about 4 cups of cold water into the bowl. Stir well until everything mixes evenly.
Adjust the taste:
Taste the water. If it feels too spicy, you can add a little more cold water or a few drops of lemon juice. If you like it tangier, add a bit more tamarind pulp.
Chill before serving:
Keep the golgappa water in the fridge for at least 30 minutes. Chilling helps the flavors blend well and gives it a refreshing taste.
Now your golgappa water is ready! You can serve it with puris filled with boiled potatoes, chickpeas, or sprouts.
