One dish that resonates with everyone during winter is the beloved Kulcha. From being a delectable breakfast option to a delightful evening snack, Kulcha seamlessly fits into any part of the day. So, as we soak in the warmth of the winter sun, here's a super easy and enjoyable recipe to prepare Green Garlic Kulcha at the comfort of your home.
Ingredients:
1. 1 small bunch of green garlic
2. 2 cups refined flour (maida) and additional for dusting
3. 1 tsp instant dry yeast
4. Salt to taste
5. 1 tsp castor sugar
6. 2 tbsps melted butter and extra for brushing
7. 2 tbsps yogurt
8. Onion seeds (kalonji) for sprinkling
To serve the Kulcha with:
- Dal makhani
- Green chutney
- Onion rings
- Lemon wedges
Method:
1. Begin by sifting the refined flour into a bowl. Add the dry yeast, salt, and castor sugar, whisking the ingredients well.
2. Create a well in the center of the mixture and add the melted butter, yogurt, and ¾ cup of water. Knead the ingredients into a fine dough, cover it with a muslin cloth, and set it aside.
3. Finely chop the green garlic bulbs and greens. After an hour, take the dough and separate it into small balls.
4. Place a dough ball on a worktop and roll it into a disc. Sprinkle the chopped green garlic and onion seeds on top, pressing everything together.
5. On a hot tawa, put some water on the base and place the kulcha with the garlic side facing up. Sprinkle water on the sides and cook for two to three minutes on medium heat with a covered lid.
6. Flip the kulcha and cook the other side for an additional two to three minutes.
7. Serve the Green Garlic Kulcha hot, accompanied by dal makhani, green chutney, onion rings, and lemon wedges.
